ThinkFoodLab, a creation of chef José Andrés’, which features a rotating roster of fast-casual concepts, has been transformed into Butterfly Tacos Y Tortas. The new menu is inspired by Mexico City's vibrant street food culture, as well as sister restaurant Oyamel. Butterfly features an all-new menu of tortas, tacos, salads, snacks, desserts, and a seasonally-driven selection of agua fresca flavors. A few menu highlights include: the cochinita pibíl con cebolla en escabeche, a taco with Yucatán-style barbecued pork with pickled red onion and cilantro, the camarones a la parilla: a sorta with grilled shrimp with sautéed squash, red chile, and avocado, and papas al mole: Fried potatoes with mole poblano, Mexican sour cream and queso fresco.
