Ripple’s last chef, Ryan Ratino, plans to open a European “bistronomy”-inspired restaurant of his own on the first floor of Policy this fall. He will be incorporating aspects of fine-dining with a more casual approach. The menu will include dishes like sea urchin linguini and cured ocean trout. His drinks program will be developed by Juan Coronado, late of Barmini. Some sample concoctions are Dihedral and Benzing, all mixed with traditional and creative ingredients.
