Starting February 1 through Fat Tuesday, February 28 his limited shop will serve whole and by-the-slice “BB” King Cakes. Chef José Andrés and ThinkFoodGroup invite you to celebrate peak-season winter black truffles in bountiful supply during the first annual Truffle Festival. The lifespan of a truffle is short – from the moment it is plucked from the soil, it should be enjoyed within a few weeks for its true character to shine. Luckily, José’s friend Nacho Ramirez Monfort has a team of Labrador Retrievers to help him harvest truffles from the roots of oak and hazelnut trees in Spain’s Northeastern Aragon region. He sends these amazing truffles, wrapped in that day’s newspaper, directly to José’s restaurants at their freshest point to celebrate the start of the season.
