Chef and owners Christophe and Michelle Poteaux of Bastille present a five-course dinner paired with some amazing bubbly vintages. The meal begins L’Amuse-Bouche of deviled egg & caviar with Saint-Hilaire, Blanquette de Limoux Brut Blanc de Blanc 2015 (Chardonnay, Chenin Blanc, Mauzac); Le Tartare de Saumon Fresh Verlasso–salmon and smoked salmon filet, shallot, capers, chives, lemon, crème fraiche, and brioche points with R. H. Coutier, Champagne Grand Cru Tradition NV (60% Pinot Noir, 40% Chardonnay); le homard au Beurre–gently butter-poached Maine lobster, vanilla-infused cauliflower puree and wilted spinach with Michel-Arnould, Champagne Grand Cru Brut Blanc de Noir NV (100% Pinot Noir); la pintade “au pot”– Guinea hen, cooked two ways, slow-roasted breast and simmered legs with winter vegetables and Andre Clouet, Champagne Grand Cru Rosé NV (100% Pinot Noir); and finally, le dessert–almond & lemon roulade with strawberry coulis and vanilla bean crèmeux with Mas de Daumas Gassac, Rosé Frizant NV (90% Cabernet Sauvignon, 10% Petit Manseng). $125 per person, excluding tax and gratuities.
