This February, the culinary team at Bas Rouge will dive into the intricacies of authentic Austrian cuisine, as they welcome fêted Michelin-starred chef Mario Lohninger of Restaurant Lohninger [Frankfurt] into the kitchen for a one-night-only dinner. The esteemed guest chef Lohninger will cook side-by-side with executive chef Harley Peet to craft a five-course menu with harmonious wine pairings for a masterful Austrian celebration. The evening will mark the conclusion of a week-long chef in residence, contributing his knowledge of techniques, ingredients, and preparation of Austrian and German cuisine. The five-course menu will feature exceptional interpretations of Austrian favorites, seasonally inspired to align with the evening’s theme, Winter in Austria. The memorable eventide will commence with an amuse-bouche of Oxtail Consommé accompanied by a bone marrow dumpling. Within the multi-course menu is a diver scallop with king crab leg, calamari, and an aromatic, tomato Paradeiser sauce. To conclude, the warm chocolate soufflé brings sweetness to the senses. Each course will be thoughtfully paired with select vintages from the award-winning wine list at Bas Rouge, recognized by Wine Spectator in 2018 with the accolade – “Best of Award of Excellence.” The five-course dinner is priced at $150 per person, exclusive of tax and gratuity.
