During the third annual Truffle Festival hosted by Chef José Andrés and ThinkFoodGroup, participating restaurants will feature black winter truffles at the peak of their season, either as an add-on to existing dishes or in special truffle dishes. The truffles, which are best enjoyed within weeks of their harvest, are coming directly from Spain by way of José’s friend Nacho Ramírez Monfort. Nacho, along with his team of Labrador Retrievers, harvests truffles straight from the roots of oak and hazelnut trees in Spain’s Northeastern Aragon region. The picked truffles are then shipped directly to José’s restaurants. Throughout the festival, diners will have the option to add truffles to existing menu items, enjoy truffle dishes with recommended beverage pairings, and try special menu items that showcase the Spanish truffles. Participating restaurants include America Eats Tavern, China Chilcano, Jaleo, Oyamel, and Zaytinya. The festival will last for about two weeks, or until the truffles run out.
