This week on Foodie & The Beast we talked about our trip to Umbria, which lies just south of Tuscany. Our guides are the owners of the D.C. restaurant and store Via Umbria, located in Georgetown, Bill and Suzy Menard. Next up was Simone Proietti-Pesci chef and owner of Le Delizie del Borgo restaurant in Bevagna, Umbria. Albertino and Jessica Pardi joined us next with wines from their family owned and operated Cantina Fratelli Pardi (Pardi Brothers Winery) in Montefalco, Umbria, they also own the Tessitura Pardi (family textile company). Last but not least we had Liam LaCivita executive chef at Via Umbria and Scott Weiss, head butcher, and manager at Via Umbria, who dazzled us with charcuterie and fresh pasta.
