Washington D.C. chef and restauranter Mike Isabella opens the next location of this restaurant in the new establishment, The Hotel, at the University of Maryland. Teaming up with Mike is chef George Pagonis, who designed a menu that highlights seafood and vegetable dishes. Some of these dishes include crispy brussel sprouts with butternut squash, octopus Santorini and roasted pork shoulder with apple, mostarda and tahini. In addition to these dishes, there is also be whole lamb shoulder, whole grilled branzino, stone baked flatbread and various Greek spreads. The beverage program includes drinks made from special techniques learned from previous openings, with classic cocktails, wines, and beers on tap.
