The back dining room and patio of Taco Bamba has become Poca Madre. Poca Madre, which is Mexican slang for “really cool” serves a menu with a refined look at Mexican dining. Albisu and his team procured rare ingredients, before their opening, like heirloom Mexican corn, Pasilla de Oaxaca chilies and directly sourced (not canned) huitlacoche. The menu includes dishes like langoustine veracruzana, roast duck pibil and sablefish al pastor. The drinks list, created by beverage director Amin Seddiq and service director Michael Iglesias, includes a variety of wines and modern leaning cocktails with a strong emphasis on agave spirits.
