The Neighborhood Restaurant Group (Vermilion, Birch & Barley/ChurchKey, Buzz Bakery, etc.) has opened a Union Market location to showcase Nathan Anda’s popular sausages, hot dogs, half-smokes and more. Anda and his team will butcher whole animals and smoke, ferment and/or cure them into finished products for the retail shop/restaurant. The space will sell the finished prooducts along with fresh cuts of beef, pork and lamb (and even offal). Anda, who has been selling his Red Apron products at area farmer's markets, will develop small menus for breakfast, lunch and dinner.
