José Andrés and ThinkFoodGroup group together to launch a venue where a series of pop-ups will open, located in Market Square. This food lab will allow the company's research & development chef team to test new food concepts in front of consumers. For the space's first pop-up, ThinkFoodLab features casual Spanish food from Pepe, the company's popular food truck. Their menu offers classic Spanish sandwiches, salads, Pan de Cristal sandwiches (made with traditional Spanish bread), ready-to-eat sandwiches and homemade soft serve. Some highlights include: Pollo Frito, Serrano y Manchego, Bocata de Vegetales and Leche Merengada. ThinkFoodLab gives the company the opportunity to test fast-casual concepts with a direct connection to guests. They are open from 11:00 a.m. to 6:00 p.m. every weekday.
