Chef/owners Christophe & Michelle Poteaux of Bastille offer a five-course prix fixe menu paired with a diverse offering of Pinots. The dinner begins with L’Amuse-Bouche of Gougères au Chèvre with  Treveri Cellars, Blanc de Noirs, Columbia Valley Washington, Brut NV (100% Pinot Noir); followed by Gravlax; house-cured salmon with citrus, herbs, and crostini with Daniel Reverdy et Fils, Sancerre Rosé, Loire FR 2018 (100% Pinot Noir); Pâté de Campagne--pork-rabbit with herbs frisée, mushroom, grainy mustard and grilled country bread with Caraccioli Cellars, CF Pinot Noir, Escolle Vineyard, Santa Lucia Highlands CA 2018 (100% Pinot Noir) Boeuf Bourguignon à l'ancienne; boneless short ribs with mushrooms, shallots, carrots, celeriac puree and herbs with Albert Boillet, Bourgogne, Côte de Beaune FR 2014 (100% Pinot Noir); and for dessert, Chef Michelle’s Cerises en “Noir”--Valrhona bittersweet chocolate cheesecake with morello cherry paired with Reine de la Ville, Ile de Beauté, Corsica FR 2018 (100% Pinot Noir).
