The Embassy of Japan and its partners present a rare culinary experience: a free, three-day Wagyu Sommelier Certification Course from October 6–8, 2025, in Washington, DC. Designed for professional chefs, restaurateurs, and distributors, this intensive program immerses participants in the world of authentic Japanese Wagyu beef.

Led by Wagyu experts and acclaimed chefs Ryan Moore (Sababa, Little Blackbird), Massimo Vicidomini (RPM Italian DC), Bertrand Chemel (2941), and Adrian Davila (Crane, Arrels), the training covers breeds, grading, traceability, butchering, and cooking techniques across premium and secondary cuts.

Participants who complete the program will earn the prestigious Level 1 Wagyu Sommelier Certification—the only Japanese Wagyu credential in the world. The course culminates in an Iron Chef-style cookoff on October 8, where participants compete before a panel of expert judges.

Registration:
The course is offered free of charge to selected DC-area culinary professionals. Registration is open now.
