The Culinary Historians of Washington Are Pleased to Present Andrew Smith speaking on “The History of Food Waste." Conserving food has been crucial to humankind’s survival. Virtually every religion forbade wasting food, and saving food was a skill and value built into the community culture. But, in the 20th century, lower food prices and societal changes enabled food waste, particularly in well-off countries. Andrew F. Smith teaches in the Food Studies Department at the New School University. He is the author or editor of 32 books, including the three-volume work, Food in America. His most recent book, Why Waste Food? Feed People, Save the Planet and Make Money, will be published in early 2020. The event is from 2:00 to 4:00 p.m.
