Rose Previte has officially debuted the wine bar at Sook DC, completing the transformation of the former Compass Rose space into a new all-day café and wine bar. The café opened in November after a summer off, and now Previte, alongside partner Sashi Jayatileke, unveils the evening offering, reimagining the space where coffee, cocktails, wine, and global flavors bring people together. From morning coffee and freshly baked pastries to spritzes and natural wines in the evening, Sook DC sources food and drink from small producers with new menu items. A roaming feast of international flavors, Sook blurs the lines between day and night: coffee and breakfast by morning, a relaxed café environment by afternoon, and a lively bar serving small plates, spritzes, and natural wines into the evening. Rooted in fair labor and sustainability, Sook partners with coffee and wine producers, traders, and leaders to ensure that everything poured and plated nourishes both the people in the room and the planet from which it came.
