Anchoring a handsome stretch of Federal Street in historic downtown Easton, Maryland, fine-dining establishment Bas Rouge boasts one of the most remarkable and comprehensive wine lists in the Mid-Atlantic. Among Bas Rouge's collection is a superior selection of vintages from Château Cos d’Estournel, which will be showcased during an exclusive four-course wine-paired dinner from executive chef Harley Peet. Etienne de Nantes, Business Development Director for Château Cos d’Estournel, will be present, welcoming diners and answering questions on behalf of the distinguished Bordeaux house, throughout the evening. The exquisite repast will commence with an amuse-bouche of Crudo of Hamachi & Ahi Tuna creatively crafted with Preserved Lemon, Cashew Tofu Cream, Sweet Peas, and Tindrel Salad, and complimented by a luscious pour of Château Cos d’Estournel Blanc 2011. The evening affair will continue with Smoked Foie Gras Carpaccio accompanied by a King Crab Salad with Chive and Horseradish, and carefully coupled with a glass of Château Cos d’Estournel 2000. To follow, the Seared Waygu Beef Strip Loin with Truffle Madeira Sauce is meticulously matched with Château Cos d’Estournel 2000. For the concluding course, patrons are invited to savor a seasonal Mille-Feuille artfully assembled with Roasted Strawberry, White Wine Sabayon, Chocolate Ganache, and Pistachio.
