Join Mess Hall for their signature whole-animal butchering class, paired with local craft beer & dinner by Smoke and Ember BBQ. Gather at Mess Hall to watch Mike Ferguson, a skilled butcher from The Organic Butcher of McLean break down a beautiful free range, heritage pig, sourced directly from Spring House Farm, in Lovettsville, Va. Mike will cover many butchering techniques and skills while you indulge in beers and BBQ. He will also discuss various types of charcuterie preparations, and unlimited Q&A. Kareem and Shelton, co-founders of Smoke and Ember Barbecue, will provide a dinner of pulled pork and smoked chicken, plus sides. VIP Ticketholders ($120) will take home premium cuts: chops, pork belly and sausage. Meat-Lover Ticketholders ($85) will take home heritage braising cuts and sausage. Voyeur tickets are $55.
