The brother duo behind some of DC’s most notorious establishments, Eric and Ian Hilton, have expanded and launched their new French concept in northern Virginia: Parc de Ville. The new 3,150 square-foot eatery features two floors and can fit up to 100 patrons inside as well as another 100 on the upstairs rooftop. In charge of cuisine is chef Brendan L’Etoile, formerly head chef at Chez Billy Sud; another Hilton brother concept. Some standouts out from Parc de Ville’s menu include the Jambon Persillée; pressed pork shank, parsley terrine, sauce gribiche and cornichons; as well as the Cervettes Avocat; poached prawns, avocado, grapefruit, and Marie Rose sauce. Guest also have the opportunity to choose from an extensive and authentic wine list.
