Ashok Bajaj’s authentic Italian gem, Bibiana Osteria-Enoteca, has new seasonal specials showcasing the white truffle.  Italian white truffles are very highly esteemed and are the most valuable on the market.  These imported delicacies are exclusively available in the months of November and December.  Guest can take advantage of this seasonal opportunity and enjoy Executive Chef Loris Navone’s regional authentic Italian fare featuring a variety of innovative yet traditional antipasti, house-made pasta and entrées, each highlighting the white truffle.  These exclusive, featured dishes will be available throughout the truffle season beginning mid-November.  Each special incorporates three grams of white truffles with prices ranging from $35 to $75 per dish.  Guests can also opt for a three-course white truffle tasting menu priced at $150 per person or $225 with wine pairings (tax and gratuity not included).  Additional white truffles can be added to any dish for an added cost of $15 per gram.  The complete list of white truffle specials is posted below.
The intense flavor of a beautiful truffle is a paradox of delicateness and umami flavor that chef Michael White of Osteria Morini believes is best enjoyed in simplicity. Chef White’s signature dish at Osteria Morini features a handmade pasta that is formed into a ridged, half-moon shape and stuffed with a creamy truffle ricotta, and topped with truffle butter and coarsely chopped prosciutto. During white truffle season, Morini is shaving additional fresh white truffles on the dish. Cappelletti is the perfect canvas that mirrors the creaminess of the truffle in the form of a black truffled ricotta ravioli with melted butter and topped with prosciutto. The shaved white truffles at Osteria Morini are $60 for 3 grams or $90 for 5 grams. 
For the month of November, truffle lovers are invited to Urbana to savor white truffle season. Chef Ethan McKee and his team of talented chefs will be on hand to shave fresh, white truffle tableside on any dish on the menu for a $10 upcharge. Chef Ethan’s top picks for truffle season include white shavings added to Urbana’s speck, cipollini, and mushroom pizza; porcini mushroom & sage butter Gemelli; and spaghetti carbonara with duck egg. Brabo Brasserie's, head bartender Brett Oye is shaking things up – literally- with white truffles behind the bar with the Truffle Vesper cocktail.  The Truffle Vesper cocktail features Plymouth Gin,truffle-infused Chopin which features shaved and macerated truffles, Lillet Blanc, and is garnished with a shaving of fresh white truffles shaving ($60). The Truffle Vesper features a bold fullness of flavor and decadent richness.
